- Prepare the pancake batter according to the instructions on our Pancake mix.
- Heat a non-stick skillet over medium heat and lightly grease it with coconut oil.
- Pour small circles of pancake batter onto the skillet to create mini pancakes. Cook until bubbles form on the surface, then flip and cook until golden brown.
- Assemble the skewers by threading mini pancakes and fresh fruit onto wooden skewers in alternating patterns.
- Drizzle with pure maple syrup or honey before serving, if desired.
